Tia Dalma and Davy Jones' connection was revealed during the Pirates of the Caribbean: At World's End. If you go back and look at what was shown, you shall find some hints about what was about to happen. In the part of the Dead Man's Chest, they both had lockets that looked suspiciously similar. We didn't realize they were hinting about the love story that started before the film.
